 Today I decided to run a test to see if my dehydrated veggies really spring back to life when cooked as promised by websites like dehydrate2store. I made a beef stew and used dehydrated celery, carrots and potatoes. It worked great. Everything perked up nicely. I feel more confident now.  Cheesy

 BTW....Dehydrated carrots are sooooo cute! They get tiny.

I know...  you would never think that the carrots would spring back the there starting size. Mushrooms too.

When I was in botany class, we were warned about putting mushrooms in our collections. We were also warned about drinks around old collections containing mushrooms. Evidentally, the never get past the point of death really. They'll rehydrate decades in the future if you give them water, they don't even need a true preservation method.
